CAPRILLA BIANCO

Grape variety: Chardonnay blend

Winemaking: The grapes are soft-pressed immediately after harvesting to retain freshness., followed by spontaneous alcoholic fermentation at controlled temperature (18-20 °C). The wine is then stabilized at low temperature (5 °C), and hold one month in contact with the finest lees. The entire process takes place in stainless steel, with the aim to entirely preserve its freshness.

Tasting notes: The combination of variety, soil and climate, give birth to a very delicate and elegant bouquet on the nose. Bold acidity and savory character, remarkable persistence on the palate.

Serving temperature: 8-10 °C.

CAPRILLA ROSÉ

Grape variety: Sangiovese

Winemaking: Sangiovese grapes are soft pressed whole without de-stemming and macerated with skin briefly to achieve the desired rosé characteristics. This is followed by spontaneous alcoholic fermentation at controlled temperature (18-20 °C). The wine is then stabilized at low temperature (5 °C), and hold one month in contact with the finest lees. The entire process takes place in stainless steel, with the aim to entirely preserve its freshness.

Tasting notes: light salmon pink color with orange shades. On the nose, marked notes of red fruits. Fresh and balanced in the mouth, with a pleasant persistency in the end.

Serving temperature: 10-12 °C.

CAPRILLA ROSSO

Grape variety: Sangiovese and Merlot

Winemaking: The grapes are soft pressed and undergo spontaneous fermentation with indigenous yeasts. Maceration lasts 15 days, in order to contain the extraction of tannins, favoring the expression of a fruity character, but ensuring a good structure. During the fermentation, temperature is controlled under 28 °C. After malo-lactic fermentation, the
two varieties are blended and aged as follows: 50% in stainless steel vats and 50% in French oaken tonneaux (50 liters), for 9 months, then blended once again before bottling.

Tasting notes: purple red color, with mauve shades. On the nose, flowers, soft fruit and cherry. Pleasantly delicate on the palate, endowed with a balanced acidity and a good structure as well.
